Chicken and Mango Thai Salad

This Chicken and Mango Thai Salad is the perfect dinner for a busy night! Our family is in the midst of making the move from Santa Monica to Kansas City; it has been crazy around here! Luckily, I always keep diced and shredded poached chicken breasts in the freezer. This allows me to assemble quick salads and soups in a fraction of the time. (It is also much cheaper and healthier than buying the cooked chicken in the deli section.) Freeze it in small portions and you will always be ready to go. The sweetness of the antioxidant rich mango contrasts perfectly with the immunity boosting red onion and bell pepper. The celery gives it a refreshing crunch, and the chicken packs it full of lean protein. This 10 minute main dish is then tossed with an omega-3 packed walnut vinaigrette. Satisfying, nourishing, and downright tasty!Ingredients (Serves 2): Cooked chicken breast, ½ pound or 2 cups diced
Celery, 2 ribs
Cilantro, ½ cup
Red onion, ¼ cup or ½ small
Red pepper, ½
Mango, ½
Peanuts, ¼ cup
Romaine lettuce, about 3 cups chopped

Vinaigrette:
• Walnut oil, 2 tbsp
• Fish sauce, 1 tbsp
• Lime juice, from 2 limes
• Organic sugar, 1 tbsp
• Sesame oil, 1 tbsp
• Crushed red pepper, ¼ tsp
• Garlic, 1 clove, minced

Preparations and Instructions (10 minutes!!!):
1. Slicing and dicing. Dice ¼ cup red onion, ½ of a red bell pepper, ½ of a mango, 2 ribs of celery, and ½ cup of cilantro. Combine in a mixing bowl with 2 cups cooked, diced chicken breast.
2. Prepare the vinaigrette. Measure and whisk together all ingredients listed under “vinaigrette”.
3. Dress the prepared ingredients according to your preference (you may have extra dressing).
4. Place chopped romaine lettuce on a platter plate. Top with mango chicken salad. Garnish with peanuts.
5. Serve and enjoy!

I live in Olathe and have tons of resources if you need the world's best chiropractor, a naturopath, etc. I see your move was over a year ago, so you might have that covered now (and hopefully are reading Tastebud magazine!?). Welcome to KC…it's an excellent city. Be sure to check out Blue Bird Bistro if you and your husband need a night out too because they are one of the best restaurants we've been too that source locally and use as much organic ingredients as possible.
