Whew! As of this morning, I feel that our family has finally figured out our back-to-school routine. I’m not going to lie, those first few weeks of getting everybody up, dressed, fed and out the door five days a week was a bit of a challenge, especially because two of my fall 2013 classes at The Culinary Center of Kansas City took place during that time frame. (Note to self: Do not agree to do anything work related during the last half of August ever again. Working moms, you amaze me!) However, I think we’ve finally got it down. A few mornings were so successful that we even had time to ride our bikes around the block before heading off to school! (It’s the little things.)
Now that our family life seems to be running smoothly, I’m excited to get back in the saddle and start sharing more of our fun recipes, videos (!!!), and tips and tricks for making this your healthiest and tastiest school year ever. Before I jump back into the recipes, I wanted to take a quick minute to share my schedule for the fall 2013 classes at The Culinary Center of Kansas City. These classes are so much fun, full of tasty food and recipes, and packed with so many tips for using food as preventative medicine that your head may just start to spin!
Pre-registration for all of these classes is required and many of the classes sell out in advance, so be sure to reserve your spot asap. Less Gluten, Better Health — Wednesday, September 18, 6:30 – 9pm –Chicken Piccata, Homemade Caesar Salad with Sprouted Croutons, Slow-Cooker Beef Stew, and PB&J Bars for dessert (Limited Hands-On with Tastings.) Note: This class is not suitable for those with Celiac’s, just those looking to consume less gluten.
Make-Ahead Magic for Your Fridge and Freezer — Monday, September 23, 6:30 – 9pm — Savory Sausage Bites, Cheddar-Pecan Dip, Homemade Chicken Stock, Slow-Cooker Chicken in a Pot, White Chicken Chili (Limited Hands-On with Tastings.)
Gluten-Free Made Easy: Gluten-Free, Not Flavor-Free — Saturday, October 12, 10am-12:30pm — Bacon, Corn and Shrimp Quinoa Risotto, Coconut Crusted Chicken Tenders, Creamy Eggplant Lentils and Leek, Wild Rice and Mushroom Soup. (Limited Hands-On with Tastings.)
Girls Night Out!!! Homemade “Real Food” Fiesta — Thursday, October 24, 6:30 – 9pm — Homemade Sweet and Sour Mix (yes, we will then use it for margaritas), Holy Moly, Guacamole, “Throw-it-Together-Company’s-Coming” Bean-a-licious Dip, Fresh Pico de Gallo, and Classic Tacos with Homemade Taco Seasoning. (Tastings.) Y’all, this is going to be one FUN class! Would love to have some familiar faces!! Unless you’re a boy, then you are NOT allowed. 🙂
The Anti-Inflammatory Diet: Using Food to Fight Your Aches and Pains — Monday, November 11, 6:30 – 9pm — Pineapple Salsa, Roasted Garlic Hummus with Crudites, “Straight-from-the-Earth” Raw Broccoli, Fruit and Nut Salad (with a good for you creamy dressing, Stovetop Chicken and Fennel, and a Healthy Berry Cobbler with a Nut-Crust. (Limited Hands-On with Tastings.)
Real Food Appetizers: Where Great Meals Start — Thursday, November 21, 6:30 – 9pm — Sweet and Savory Cheddar-Pecan Dip, Bacon-Wrapped Apricot Sage Bites, Smoked Salmon Dip, Cowboy Caviar, and Homemade French Onion Dip with Crudites. (Limited Hands-On with Tastings.)
Real Food: Your “Go-To” Meal for Entertaining — Saturday, November 30, 10am – 12:30pm — Make-ahead Crab Appetizer, Homemade Caesar Salad with Polenta Croutons, Classic Bolognese (not-your-mama’s pasta sauce) French Bread topped with Creamy Herb Spread, and Extravagant Chocolate Torte with Fresh Cream and Berries. (Limited Hands-On with Tastings.) I had a friend ask me how I decided on the menu. My answer, “well, it is my go-to meal for entertaining”. Come and join us!
Girls Night Out! Holiday Trifecta: Cocktails, Gifts & Goodies — Thursday, December 5, 6:30 – 9pm –We will start the evening sipping on the classic French (ooh la la) cocktail Kir Royale, while Katie teaches us how to create two of her favorite “girls night” appetizers (you’ll wanna keep these a secret from the fellas). After that, it’s time to don your apron as we craft elegant, edible gifts to take home (who needs Black Friday, pfft!) . After rolling out the “Ultimate Sugar Cookie” dough, we turn our attention to a favorite holiday treat — candied pecans (can’t ya just smell them now!). While they get nice and toasty in the oven, you’ll add your own creative decorative flair to your Ultimate Sugar Cookies! With all those sweets we must have some savory dishes to round out the night. Our little soiree will include Make-Ahead Cheddar-Pecan Dip and Savory Sausage Bites. The best part…explaining to your loved ones that you were actually “working” tonight when you return home with more holiday gifts wrapped and ready to give! I am so excited about this!! I’m actually getting paid to throw a party!!! (And I don’t have to do the cleaning!)
Junior Chefs (Ages 9 – 14): Homemade Edible Holiday Gifts!!! — Saturday, December 7, 10am-12:30pm — Drop your aspiring chefs off while you do your own shopping! The kids will learn how to season and roast spiced nuts, and package them with artistic flair. They’ll garner essential baking skills as they whip up a batch of Dark Chocolate Peppermint Crinkle Cookies, and channel their inner artist to decorate a take-home box. And they’ll prepare Elves’ Delight Hot Cocoa Mix and decorate the jar it’ll go home in. Just act surprised when they bestow these treasures on you, okay?! (Hands-On with Tastings.) Includes Take-Home Box of Cookies, Bag of Spiced Nuts, and Jar of Cocoa Mix. This is a repeat class from last year and the kids and I had a blast both baking and decorating our presents! Please note this is for boys and girls aged 9 – 14 only.
Junior Chefs (Ages 9 – 14): “I’m Throwing a Party Mom!” –Sunday, December 29, 10am-12:30pm — Heads up Junior Chefs! It’s time to put on your trendiest party duds and step into the spotlight! Be the life of the party and wow your guests with homemade culinary delights straight from your kitchen. In today’s class, you will learn everything you need to know to make the ultimate “made-from-scratch” party food! Don your chef’s coat, roll up those sleeves and let’s get down to business. Your party planning menu will consist of “Nothing but Fresh” Squeezed Cherry Limeades (Sonic who?) and Homemade “Move Over McD’s” Chicken Bites for starters. Then you’ll move on to The Ultimate Pizza Buffet (of course we will be making the crust from scratch too!), and finish out the day creating an elegant and tasteful Rainbow Fruit “Pizza”. Can’t you just see their smiles widening after each course! Trust us the Food Channel will be knocking down your door after today! (Hands On with Tastings.) Boys and girls ages 9 – 14 only.
